It is a proper beech pin with five pairs of colour-coded rings that clip onto the ends and hold the rolling surface exactly 2mm, 4mm, 6mm, 8mm or 10mm off the board. Twist off the rings you do not need and it works as an ordinary rolling pin for pastry, pizza bases and dough. Because the pin is wood it is hand wash only — do not submerge it, dry it immediately, and oil it occasionally with a food-safe oil, which is sensible practice anyway through a damp long-rains season.
