Twist is one whisk that does both jobs. A simple turn of the handle changes the wire cage from a balloon shape for whipping and aerating to a flat profile for blending gravies, roux and custards against the base of a pan — and the same movement folds it flat so it slides into a drawer instead of tangling with everything else. The steel wires are silicone-coated, so they are safe on non-stick pans and will not scratch your good sufuria, and they handle heat up to 200°C for working straight in a hot pan.
