Mukimo is a workout. A full sufuria of potatoes, maize, beans and njahi has to come together into something smooth, and a thin wire masher either bends or leaves half the potato stuck to the sides of the pan. Then you spend as long picking dried starch out of the mashing head as you did cooking.

The Duo masher is built for the heavy job. The head is tough, with holes wide enough that mash pushes through and releases instead of caking, and the edges are shaped to scrape down the inside of the pan so the potato at the sides gets mashed with everything else. The handle is a D-shape, which lets you press straight down with your palm and your body weight over it rather than gripping a thin stick with your fingers — a real difference when you are mashing for eight people. It goes in the dishwasher afterwards, and it carries a 1-year guarantee.
