Whole spices give a stew a depth that ground powder never quite reaches — but then you are chasing cardamom pods and bay leaves around the pot with a spoon, or a guest bites down on a peppercorn. The usual compromise is to grind everything, and lose the slow, clean flavour that whole spices give a pilau or a beef stew.

The Gusto is a stirring spoon with a hollow, perforated head that opens. Load it with bay, cinnamon bark, cardamom, cloves, peppercorns or a handful of fresh herbs, close the lid, and stir as you normally would — flavour passes out through the perforations while the spices stay inside, so you lift the lot out in one movement at the end of cooking. The handle has a herb-stripping tool built into it for pulling rosemary and thyme leaves off their stalks, so it does two jobs on the way to the pot. It is nylon, which makes it safe in every type of cookware including non-stick, and it is BPA free, food safe, heat resistant and dishwasher safe.
